Chocolate Stout Cupcakes!
Posted in Cupcake Flavors on August 27th, 2011 by admin – Comments OffIt’s been a while, but we’re still here, and still experimenting with delicious cupcakes! We aren’t doing the farmers market scene anymore, though, as we’ve decided to go back to college!
When we last posted (about a year and a half ago, yikes!), we had made lemon cupcakes in jars and sent them to our friends all over, including all the way to Toronto in Canada!
So, on top of being gamer geeks, we are also huge fans of the television show Glee (though we tend to shy away from calling ourselves ‘gleeks’, because that word just sounds kind of ridiculous). One of our favorite arrangements from the show is Blaine and the Pips, er, we mean the Dalton Academy Warblers’ cover of Pink’s Raise Your Glass. It’s a fun song, and as some of you who know us well can guess, we’re kind of suckers for all-male a cappella groups here.
In any event, one of the friends in Toronto that we sent cupcakes to is the lead singer for a pub band called Johnny Devil and the Screamin’ Demons. They’re a super-fun band, and so we suggested that they also perform a cover of “Raise Your Glass”, as it seemed like a good fit for the band’s sound and attitude. Johnny thought it was a great idea as well, but demanded a price for the arrangement – more delicious cupcakes in jars.
Since Johnny and his Demons are a pub band whose traditional toast between songs is “Cheers, my dears, let’s grease the gears” before downing a pint, we decided we’d try out a recipe we’ve been thinking about for a while – chocolate stout cupcakes.
We decided to use this recipe as the base for our cake. For the stout beer that the recipe calls for, we went with Stone Brewing Company’s Stone Smoked Porter. We live not far from Stone’s original brewery location, and we’re big fans of their beer and the food they serve in their bistro. Plus we always are looking to use high quality ingredients in our cupcakes, and their beer is about as high quality as they come.
For the frosting, we decided to make a white chocolate ganache with Stone’s India Pale Ale. We were looking to make a frosting that would compliment the cupcake and create a visual effect similar to the head on a pint of beer. The ganache was made with:
-16 oz white chocolate
-4 tbsp butter
-1/2 cup heavy cream
-1/2 cup Stone IPA
We cooled the ganache overnight, and then put it in a bowl to whip. We originally weren’t sure about whether or not we should add it to our usual buttercream frosting, but after whipping it, we liked the consistency, so we frosted the cupcakes with straight ganache.
This is the first ‘draft’ version of these cupcakes, and we’re about to take them to a party. Stay tuned and we’ll let you know what our taste testers thought of them!

The first stencil we used was a spiderweb, so we decided to put a black widow spider on it. Black frosting, and a red M&M for the spot on the thorax. 
One could almost be a beholder, except he doesn’t have the giant eyeball in the middle (did we mention we’re big nerds?)
The shaggy effect was done with a knife and cocktail toothpick, the eyes and nose are M&Ms, the teeth are cut-up marshmallows, and the tongue is strawberry Fruit By The Foot. We’re really proud of the way he turned out, so much so that we made three of them. And then, because we had three werewolves, and because we’re great big nerds, we just had to incorporate an Internet meme. And so, we give you…

The booth was a lot of fun today. We sold a bunch of cupcakes, saw a few trick or treaters (and rewarded them with delicious cupcakes, of course), and got asked a lot of questions and handed out a ton of business cards. Things seem to be going really well, and we’re excited to see what November and December bring us!
